This overnight chia pudding combines fibre-rich chia seeds with collagen peptides in a simple, nourishing breakfast that's ready when you are. Ingredients
- ¼ cup chia seeds
- 1 cup coconut milk
- 6g Matcha Collagen Latte powder
- 1 tsp honey (optional)
- ½ cup fresh raspberries
- ½ cup yoghurt or coconut yoghurt
Toppings:
- Fresh raspberries
- Coconut flakes
Method
- First, mix your chia seeds, coconut milk, matcha powder and honey until smooth.
- Chill for 2 to 4 hours or overnight until thick.
- Mash raspberries with a fork.
- Layer chia pudding, yoghurt and raspberries.
- For the final garnish, top with fresh berries and coconut flakes.
