Carrot cake that actually counts as a protein hit? Say less. Made with Free Soul Vegan Protein Blend, this one's soft, spiced and topped with a cream cheese frosting that'll have you cutting a second slice before the first one's gone.
Ingredients
For the Cake:
- 🥕 60g Free Soul Vanilla Vegan Protein Blend
- 🥕 150g Oats
- 🥕 1 tsp Baking Powder
- 🥕 1tsp Cinnamon
- 🥕 20g Sweetener
- 🥕 40g Raisins
- 🥕 40g Walnuts
- 🥕 100g Carrot
- 🥕 80g Apple sauce
- 🥕 30g Coconut Oil
- 🥕 60ml Oat Milk
- 🥕 1 Egg
For the Frosting:
- 🥕 10g Free Soul Vanilla Vegan Protein Blend
- 🥕 150g Philadelphia
- 🥕 Vanilla Extract
Method
- Preheat oven to 170°C.
- Line tray with baking paper.
- Combine all dry ingredients in a bowl, set aside.
- In separate bowl mix wet ingredients, add carrot, walnuts & raisins then add to dry ingredients.
- Mix well.
- Pour into prepared dish and bake for 12-15 mins.
- Leave to cool completely before frosting.
- Beat frosting together ingredients until smooth.
- Frost cake & top w/ walnuts & cinnamon.
- Slice into 8 squares.
- Enjoy!
