Banana Bread

This recipe is gonna make you go bananaazzz girl ๐ŸŒ๐Ÿคทโ€โ™€ (Dad joke, sorry #notsorry) @bonniebrazilb has whipped this incredibly gooey, high protein, delicious banana bread and itโ€™s making the Free Soul kitchen smell INSANE ๐Ÿ˜ try this one out ladies!


Wet Ingredientsโฌ‡๏ธ
๐ŸŒ3 very ripe bananas (300g)

๐ŸŒ150g soya yogurt

๐ŸŒ30ml/3 tbsp aquafaba OR 1 flax egg

๐ŸŒ90ml maple syrup ๐Ÿฏ

๐ŸŒ1 tsp vanilla extract

๐ŸŒ1 flax egg ๐ŸŒ50ml oat milk

๐ŸŒ15g (2 tsp) coconut oil


Dry Ingredientsโฌ‡๏ธ
๐Ÿž140g wholemeal flour

๐Ÿž30g oat flour

๐Ÿž50g free soul vegan vanilla protein

๐Ÿž1 tsp baking powder

๐Ÿž1 tsp cinnamon

๐Ÿž30g chopped walnuts

๐Ÿž60g raisins

Topping (optional)โฌ‡๏ธ
โœจ15g vanilla protein

โœจ10g coconut sugar

โœจ15g oats

Method โฌ

Preheat oven to 180c and line or grease a loaf tin. Combine all the wet ingredients in a bowl. In another bowl, combine the first 5 dry ingredients. Pour the wet ingredients into the dry ingredients mixture, then stir. Once combined, stir in the walnuts and raisins. Transfer the mixture to the loaf tin. In a small bowl, combine the topping ingredients and sprinkle over the cake mixture. Cook in the oven for 45 minutes, or until a skewer comes out clean. Allow to cool in loaf tin for 20 minutes, then transfer to a wire rack and cool for a further 20 minutes. Enjoy! ๐Ÿคฉ
