Vegan Protein Pumpkin Spice Muffins
The most delicious and comforting autumnal afternoon treat from made with vegan protein @FigurebyGurleen
These muffins are high in fibre thanks to all the Pumpkin with in turn has some great gut health benefits 💖 🍁 Not to mention, Pumpkin Seeds are full of good fats and antioxidants 🎃
Tools:
- hand whisk
- bowl
- cupcake moulds
- cupcake tray
Ingredients:
✨90g oat flour (dry blended oats)
✨30g @freesoulsistas vegan vanilla protein powder
✨250ml milk of choice
✨1tsp baking powder
✨1tsp oil
✨1tsp vanilla essence
✨sprinkle all spice blend
✨50g pumpkin purée
✨3-5 tbsp sweetener (I used xylitol but stevia is good too)
✨20g pumpkin and sunflower seed blend
(Optional chocolate chips)
Method:
1️⃣Pre-heat the oven to 180°c.
2️⃣Add all the ingredients to a bowl (I start with milk first so the flour doesn’t stick to the bottom) and whisk for 2-5 minutes.
3️⃣ Pour mixture in cupcake tray (should make about 12) and top with pumpkin seeds.
4️⃣ Cook muffins for 20 minutes or or until golden brown and cooked through.
Per muffin:
64kcal Carbs: 8g Protein: 3G Fat: 2g
Top tip: add maple syrup on top for a sweeter and deeper taste.
