Protein and peanut butter donuts

Recipe (makes 14)


For the donuts:
-1 cup oat flour
-1 scoop vanilla protein powder
-1/3 cup light brown sugar
-1+1/2 tsp baking powder
-pinch of salt
-3 tbsp peanut butter
-3 tbsp butter (melted)
-1 tsp vanilla extract
-3/4 cup oat milk


For the frosting:
-1/3 cup dark chocolate chips
-3 tbsp peanut butter
-1 tbsp butter
-1 tbsp maple syrup
-5 tbsp oat milk


In a large bowl, add oat flour, vanilla protein powder, sugar, baking powder and salt and stir. Then, add the rest of the ingredients for the donuts and mix until well combined. Grease a donut mould and add the batter (its easier if you use a piping bag). Bake for 15 minutes in a preheated oven at 175°C. While the donuts are baking, add dark chocolate, peanut butter and butter and melt in the microwave. Continue by adding the maple syrup and the milk and stir until smooth. Once then donuts are cooked, let them cool for at least half an hour before removing from the mould. Lastly, top with the frosting and enjoy!
