Pear Protein Muffins

Excuse me, vot? Pear Protein Muffins 🤯 @nourishing.amy pushing the boundaries of what is possible in the protein universe if you don’t fancy a shake, damn girl 🔥enjoy as a super healthy high-protein treat, these are b-e-a-utiful, recipe below: 🍐Protein Breakfast Muffins 🍐

INGREDIENTS⬇️

* 30 g Free Soul chocolate protein powder (or vanilla flavour)
* 1 large pear
* 40g oats
* 1 tbsp ground flaxseed
* 1 tbsp chia seeds
* 1/2 tsp baking powder
* 1 tsp cacao powder
* 2 tbsp coconut flour
* 25ml cashew milk (or other milk for nut-free option)
* To serve: yoghurt, fruit, chocolate sauce.

DIRECTIONS⬇️

  1. Preheat the oven to 160Fan/180*C and line a muffin tray with 6 cases. Cut off a small chunk of the pear for topping and leave to one side. Grate the rest of the pear and transfer the fruit and all the juices to a bowl. Leave to rest for 10 minutes.
  2. Add all the ingredients to the grated pear and stir until thick and combined.
  3. Slice the leftover pear into small chunks.
  4. Divide the muffin batter between 5-6 muffin cases and top with a couple of pieces of pear.
  5. Bake in the oven for 25 minutes or until firm. Allow to cool slightly before carefully removing them from the muffin tin or liners and enjoy warm or cold.
