The Ultimate Carrot Cake

There’s a reason why @bonniebrazilb has called this the The Ultimate Carrot Cake with frosting: it’s extra moist and tender and flavored with the perfect blend of spices. It’s then topped with a smooth and creamy whipped cream cheese frosting. The end result is, dare I say it, the BEST homemade carrot cake you’ve ever had! Plus it’s high in Free Soul Protein 💅🏻

🥕Frosted carrot cake slices

🥕 Ingredients⬇️
Wet 💦
2 medium bananas
2 medium carrots, peeled and grated
2 flax eggs
120ml maple syrup
14g coconut oil, melted
1 tsp apple cider vinegar
1 tsp vanilla extract

Dry
60g Free Soul vegan vanilla protein 💫
100g wholemeal flour
1 tsp baking powder
0.5 tsp bicarbonate of sode
1 tsp cinnamon

Frosting
125g vegan cream cheese - room temp
30g vegan spread (I used avocado oil spread ) - room temp
20g Free Soul vegan vanilla protein 💫
40g icing sugar
0.5 tsp vanilla extract
1 tsp cinnamon

🥕Method⬇️
🥕Preheat the oven to 180c and line a tray with baking paper or spray with spray oil
🥕Mash the banana then combine the remaining wet ingredients into one bowl then combine dry ingredients in another.

🥕Slowly pour wet mixture into the dry ingredients, stirring well
🥕Transfer to the tray and bake for 25-30 minutes, until a skewer comes out clean
🥕Allow to cool in the tray for 10 minutes, then gently remove and allow to cool completely on a wire rack
🥕In a blender, sift in the icing sugar and combine with the remaining ingredients (you can also do this in a bowl but start with the vegan cheese and spread, then slowly add the remaining ingredients)
🥕Transfer to the fridge to stiffen up for about 30 minutes
🥕Once the cake has cooled, top with the frosting, cut into slices and enjoy!
